[edit] Know Your Onions

Long time ago, a Sikh colleague told me the secret to a good curry was onions, always put in slightly more onion than you think. Since then I have done this and found it works. Whenever I have put in fewer onions, say when I haven't enough, there is always something missing from the flavour. If you miss out a spice, it tastes different but is still a curry, but miss out the onions and it's not.
